It's been a while!

Well looks like I am slacking a little bit in the blog world! We are so excited that school is over for the semester. Matt did so amazing this semester! I am so proud of him. He got a 3.6! I wish I could of grabbed that GPA. I did good except for the dreaded calculus class. I got a D+....oh no!!!! Do you know what this means. I have to take it again! I have to get a C!!!! Oh well, not much I can do about it now.
Let's see...what else is new. I go my hair cut. It is now short and blonde! I am loving it so far! It's my summer hair do!
We stayed in Logan for the summer because we both have great jobs here. I am working at Logan River and I just love working there. Number one, it is a golf course,which I love of course! Free golf...you can't get much better then that! Oh and I love the people I work with. My coworkers are pretty much my family in Logan. Matt is working at CampSaver. He works full time for the summer. He also loves his job and the people he works with. We don't see eachother as much as we thought we would since it's the summer and we don't have school but that was false!
We have been golfing as much as we can. We usually go right when he gets off at 6....that is if I am not working. That has been our summer activities so far. Other then Monopoly and Scrabble! Well can't think of much else! Love you all!

3 months, Eternity to go!!

So I've been slacking on this whole blogging thing!! I was doing so good for a long while!!! Today marks Matt and I's 3 month anniversary! We went out to delicious Indian Oven. So much amazing food! I love the Chicken Coconut Karma!!!! If you've never tried it you better stop in!!! I thought to celebrate our 3 months together I'd state just a few things I love about being married....if I don't stop myself I could go on for ages so here's a few
  • Always having your best friend around.
  • Having someone to cheer you up no matter what.
  • Being so extremely comfortable with each other that sometimes I am just amazed!
  • Thinking about the future and having a family with Matt being the perfect daddy ever.
  • Going to the temple with my love
  • Still being in awe that my husband is that dang sexy and sweet.
  • Being cheesy and not even caring.
  • Figuring out how to be a housewife(even though I don't really have the cleaning part down yet)
  • Snuggling every single night and waking up to a kiss and a hug.
  • Laughing nonstop!
  • Sharing everything(even the full size bed which is a bit tough sharing sometimes)
  • Knowing that I will be with my love for eternity.
  • Loving with all of my heart
  • Nothing is better!!!
I love being married! I don't know why people say that the first year is the hardest. It is a time that you have to be totally selfless and let a person completely into your world there is nothing that can compare to the love you receive daily from your spouse and the ability to care and love someone to no end! Matt is my world and he always will be and I am so grateful for him and all that he does for me. I am grateful for the gospel and the blessing of eternal family! I am the happiest ever and I don't see that ever ending!

PTI

Pardon the interruption of the 30-day challenge but I found this delicious and delightfully easy dinner that anyone would like!

Super Stuffed French Bread Pizza Rustica

Ingredients
  • 1 (2 foot long) loaf French bread
  • 1 pound sweet Italian sausage
  • 1 tablespoon extra-virgin olive oil
  • 1 small red bell pepper, seeded and chopped
  • 1 small onion, chopped
  • 2 large cloves garlic, chopped
  • 1 package frozen chopped spinach defrosted and squeezed dry
  • Salt and pepper
  • 1 1/2 cups part skim ricotta
  • 1/2 cup grated Parmesan
  • 1/2 pound sweet sopressata, from the deli, sliced thick, chopped
  • 1/2 stick pepperoni, chopped
  • 1 sack (10 ounces) shredded mozzarella
  • 1 sack (10 ounces) shredded provolone
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes

Directions

Preheat oven to 425 degrees F.

Split bread lengthwise and hollow it out. Cut in half across, making 4 shells for pizzas.

Heat a skillet over medium high flame and brown sausage in extra-virgin olive oil. Brown and crumble sausage. Add red bell pepper, onion and garlic. Cook 3 to 5 minutes, add spinach. Remove mixture from heat and season with a pinch of salt and black pepper, to your taste.

Transfer to a bowl. Combine sausage and veggies with ricotta, Parmesan, sopressata and pepperoni. Fill bread shells and top with mounded mozzarella and provolone cheeses. Place in hot oven on cookie sheet and bake until cheese melts and bubbles and bread is super crisp, about 10 to 12 minutes. Top pizzas with oregano and hot pepper flakes. Serve immediately, or snack all night!

Okay so of course I made a few changes to my liking. This household likes spicy food so instead of the sweet Italian sausage I used hot Italian sausage(which was tasty). I skipped out on the spinach not because I don't like it, just because it sounded kinda weird in my pizza. Also, I love green peppers so I used one small red bell pepper and one small green pepper. I skipped on the red pepper flakes since I already had spicy sausage. Oh and I spread a small layer of marinara sauce I had in the fridge on the bread shells before putting the filling in!!! Try this recipe you won't regret it!

Day 13 and 14

Day 13 – Your favorite musician and why?

Well its so hard to just pinpoint one artist that is your favorite! I really have never been able too!! Music is just so wonderful and I love a wide variety of genres! So I will just name a few that I love. These are the CD's you put in your car and they stay in for weeks/months and you don't get tired of them!!

Okay this is a recent addiction and I ask myself why everytime I watch it! It is so disturbing to watch all of these killers but at the same time intriguing and
I end up watching it till the end every time! I just don't know why?? It is so good though! On a lighter note I can not get enough of this show and its hilarious cast....

This is where we live. The beautiful town of Logan Utah! I love how beautiful our surroundings are. The other day I was on the bus and I was looking around outside and admiring the mountains. This town is just surrounded with amazing mountains that right now are snow capped! I love it!

Day 10 and 11

Day 10 – A photo of your favorite place to eat.
Way too hard of a question. If you know me you know I love food!!! Oh and I love going out to eat! One of my favorite things is to try new places and new food! I don't know if I really have a favorite. In Logan I would have to say that it would have to be this place even though it is in Smithfield....And anytime I'm in the hometown of Sheridan Wyoming I have to eat here... And I everytime we go to Draper I want to eat here....
Oh there are so many more I could put on here. I'll list a few more favorites in Logan: Takara Sushi, Kamin, Indian Oven, Texas Roadhouse and I love Jimmy Johns too!!

Day 11 – What’s in your makeup bag?
Well that's a fun question because I just got a whole new revamped makeup bag for my birthday!! I don't really like buying makeup with my own money cause that stuff adds up so fast! I asked my mom to get me a new makeup bag and she got me a cute zebra one that I love and a whole new collection of makeup. Well, It's just the basics so a bit of lotion, blush, mascara and eyeliner. There is a whole new part of my makeup collection that I am obsessed with...It's called MAC eyeshadow and my sister-in-law got me addicted. She got me a gift card for Christmas to start and I got some more for my birthday so I know have eight colors and I love them so much. I never really got into makeup until I was introduced to this stuff!!! New favorite color...Stars and Rockets. This picture doesn't give it justice!

I may have a slight addiction and it's not only Dr. Pepper. It's all soda!! Mostly Dr. Pepper, Diet Mt. Dew and Diet Coke. I love The McDonald's dollar Diet Cokes. Best thing ever but since I'm just on campus in between classes I thought I'd need a little drink. The drink of choice today a nice cold Dr. Pepper. I need to get off this addiction and I did for about 2 months one time but decided I might as well go back to it, so I did!

Day 6 – A photo of an animal you’d love to keep as a pet.Okay I usually don't like little dogs but these puppies are the cutest things ever. They are called Teddy Bear puppies. It is a hybrid dog of Shih Tzu Bichon-poo mix. I don't even know what that means but I want one so bad! Mostly I just really want a puppy. I don't think Matt would ever go for one of these or allow me to have one but I'm going to work on him. I would take any puppy though!

Well I can't really narrow down a single best friend because I have so many wonderful friends. First of all of course my Mom. The one I always turn to and the one that always has the right things to say no matter what, even if I don't want to hear it! Always there for me!!!
My beautiful sisters who can always cheer me up. Even though I don't see them that much they mean the world to me and I am so grateful to be so close to them although we live hours apart!

My awesome niece Kailey Bean! She was born when I was 12. I grew up always being around her. We were always together and she was my mini me. I don't get to see her as much as I would like because we are too far apart but I love her so much!! It's crazy seeing her getting older!
Lannold, Foxy, Lannolin, Lanilia or just Lanni. We were best friends through high school and I only see her like once a year these days which sucks and we end up talking for hours and hours which I love! She is an amazing lady and I am so proud of her and all the work she is putting into school!!Kelsey and Alex. So much to say!!! Kelsey and me met my first year up at Utah State and we were instant friends! We didn't spend many hours apart and had the best freshman experience ever. I was with these two through their whole relationship and now Alex is also one of my best friends. I don't know how many times it was just Kelsey, Alex and me hanging out!!
Chelsea!!! The soon to be new mom! I am so excited for her and I can't wait to meet my little nephew. We met at some random cabin trip but we were friends from then on out! We always have so much fun and I am sure we are so annoying to everyone else when we are together but we don't care!
These lovely ladies have been such a big part in my life throughout college. They will always be great friend! I love them all so much!!Sami!! She is one of the most beautiful girls I have ever met. Not only outside but inside. She is so loving and kind. She always has a smile on her face no matter whats going on. She is such a sweetheart and I am so lucky that I have her as a close friend!!

Day 3

Day 3 – Your idea of the perfect first date.

Oh the joy of never having another first date again!!! First dates always made me so nervous and most of the time it was the most awkward situation....mostly I think because of me! Ha. So once again I am changing the question again!!!! So my question that I will be answering is....my favorite date with Matt.

Golf and food!! That's it! That is what makes me happy!! Last year Matt took me to a golf course in Brigham City that we never get to play because it is 30 minutes away. Then I beat him which always makes me happy!! Next is food. I love love love eating at new and fun places, pretty much I just love eating out!!! So he took me to a place in Ogden that has delicious, Roosters! Oh it is so tasty!!!

That my friends is one of my favorite dates with Matt!!! Any date with Matt is wonderful though!!

Day 2

Well I thought this was a bit of a boring question. I really didn't eat anything exciting other then some easy mac for lunch and a chimi for dinner. Don't get me wrong these things are delicious but boring so I came up with my own question of the day....A photo of something you could eat everyday......
Reese's Eggs...Oh I could eat close to a bag of these a day. Don't get me wrong I love regular Reece's, Reece's Big Cups, and Reese's Fast Break. There is just something about these eggs that make them taste so much better!!! They just melt in your mouth and make you have a wonderful day!!!! Yum Yum!
Next thing I could eat everyday....Edemame! Oh I love these little beans in their salty shell!! You just can't go wrong with this at all. I wouldn't mind having a constant supply of these things. The are like popcorn or chips. I could just sit on the couch and eat these all day!!

So I just posted that I am doing the 30 day challenge and I thought I might as well start today!! Two blogs in a row!! I'm getting really good at this blogging thing!Oh my day....well to tell the truth not the greatest. Really long I guess you could say. It just involved a lot of school. Feeling a little stressed because I am suppose to be good at math and calculus is killing me. I got home from school and did a take home exam in my other math class that took a couple hours. Then Matt got home so things got better! He made us some dinner. He had an intermural game so I went with him to watch. They played awesome and won. Oh then Matt took me to get ice cream! He knows what I like and what makes me happier! ha! Now I'm just sitting here but we are about to dance on our xbox kinect so things are looking up!!

Two Peas In a Pod

I was looking through Matt's pictures and I found this lovely picture that someone had taken of him. It was when he was in Nauvoo going to BYU Nauvoo. They were headed up to New York and I guess he was a bit tired. I died laughing cause I have a very similar picture.




Here's my lovely picture that someone decided to snap. This was the summer before my senior year in high school. I had the opportunity to go to Greece and Italy for 3 weeks. We spent a lot of time on a bus and it was such a go go go trip that I seemed to be tired a lot!

Delicious Dinner!!!

Black Bean and Chicken Enchiladas

Ingredients

  • 2 teaspoons olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces *see cook's note
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (4-ounce) can diced green chiles
  • 1/3 cup prepared salsa, mild, medium or hot
  • 2 tablespoons chopped fresh cilantro leaves
  • 4 (8-inch) flour tortillas
  • 1 1/3 cups shredded Monterey jack and or Cheddar
  • *Cook's note: this is enough chicken to make this meal and another meal. If you are only making this meal, use 1 pound chicken.

Directions

Preheat oven to 400 degrees F.

Heat oil in a large skillet over medium heat. Add onion and garlic and saute 2 minutes. Add chicken and saute 5 minutes, until golden brown and cooked through. Remove half of the chicken and reserve for another use.

Stir in black beans, green chiles, and salsa and simmer 5 minutes, until sauce thickens and reduces. Remove from heat and stir in cilantro.

Arrange 4 tortillas on a flat surface. Top each tortilla with an equal amount of chicken mixture. Roll up tortillas and place side by side in a shallow baking dish. Top tortillas with shredded cheese (1/3 cup per tortilla).

Bake enchiladas 15 minutes, until cheese is golden and gooey

One of Matts favorite foods is Mexican so I decided to make him these enchiladas and some chips and guacamole. This was a really tasty and easy. I made a few changes though. I put some cream cheese in the chicken mixture a little bit after I put the chicken in. Then I made about a cup of rice and mixed that in with the mixture after it is taken off the heat. I put a little layer of sour cream on the tortilla and put some cheese there too. I put enchilada sauce on the bottem of the pan and on the top and of course a lot of cheese on top!!! Try it! You won't regret it!!!

This is the reason Matt fell in love with me

So....I took an ice skating class a few semesters ago. Well if we missed 3 or more classes we had to do a solo so we didn't fail the class. I probably missed about 4 so guess what...I got to do a solo!! It was so funny watching everyone else perform because all of their routines were so serious and I just kept thinking about my upcoming solo!! This is what I did!! A little tribute to MJ. The music keeps going but the screen goes blank there is no more!! Hope you all enjoy! I wanted to find a goofy video of Matt too but I can't find one on his computer so hopefully I'll find one soon!

Today I love you because...

So...It's around Valentine's day meaning I can be cheesy...well more cheesy then usual! I thought I'd share something that Matt and I have done since we got married. I had heard of an idea that I thought was the cutest thing ever...Every night before you went to be you would have a little notebook by your bed. Right before you went to sleep you write something you love about your significant other. It could be something the did that was special that day or something in general that you love! Then a year later you exchange then and get to read what your spouse loves about you. Well I told Matt this idea cause like I said I'm usually pretty cheesy. Well we never ended up doing it. BUT we do the lazy approach to this idea. Each night before we go to bed we say something that we love about each other. Sometimes it can just be something silly or little that they did that day. Like the other day Matt loved me because I played halo with him and the guys. That same day I think I loved him cause he was hot and very easy to look at. So it doesn't have to be this huge thought out romantic thing, although of course that is always night to, but something simple that you love about your best friend! It makes you realize that you are loved no matter what! That love will never die!!

Oh yeah I have a blog!

Wow... I think I kind of forgot that I have a blog! But I'm back and we are married! Wow what an amazing experience we have been having becoming our own little family!! We are still so in love, probably more then we thought was ever possible! I don't even know how to start or where to begin! The last few months have been the greatest ever!
December was such a great month. First I'll start off with the beginning of December. This is when I had my bridals taken. I was so so so lucky because my mom was able to come to Logan for the week before to get everything done that I needed to before I had pictures and to help with that huge dress! I don't know what I would of done if she wasn't there. I was also so emotional...(getting use to that blasted birth control) so there were a few days that I am sure that she really was wondering why she came!! Well I really only wanted to say that and to tell one little story that happend. Well the day of my bridals I didn't eat anything pretty much because I wanted to look hot in my dress. Everything was good we were taking all the pictures and whatnot...then it hit....a BLOODY NOSE! In my perfect white dress. Oh I'm sure it was the funniest site ever. I was hunched over with my hand on my nose, Matt was right next to me with his hand on mine and my mom was running to the bathroom to get tissue. Then we moved out hands to get the tissue on my nose. Oh yep, blood on my dress. Then I was sitting down pretty much laughing cause I had nothing else to do, then Matt ran to get the white sheet we had so I didn't get my dress dirty and wrapped it around me! My mom was on her knees scrubbing at my dress trying to get the blood out! Anyway I just had to share that cause who does that happen to really??? Well here is a few products of that day(by the way we took it to get cleaned and we got all the spots out)

Next came December 30th! The best day ever! It was such an amazing and special day!! I stayed the night with my best friend Lanni that night and we did go to bed later then we wanted. I was sleeping really good which is surprising. Then something woke me up around 4 and I couldn't go back to sleep! I was way to excited at this point! I was checking my phone about every 10 minutes to see if it was time to get up!! I was up at 615 cause my makeup and hair appointment was at 645!! I got all prettied up and headed to the temple! Being sealed to my best friend and love was the best moment of my life! What a special feeling to know that we are sealed for eternity and our love will never end!! It was so amazing looking around and seeing both of our families! Especially our parents!! Our sealer was my grandpas nephew so that was very special too! Having my grandparents there from Boise was so amazing! They got sealed in the same temple many years before that and my grandpa kept saying the sweetest things and would bring me to tears everytime I hugged him!! After the temple we took pictures and it was absolutely freezing! Then we had a pit stop at the gas station to grab a energy drink then we headed down to our reception! The reception was so so perfect! I couldn't ask for anything better! I wish I had some pictures but we haven't gotten them back yet! So in a future post!!
Next was the honeymoon!! We left from Salt Lake the next day and we were so dead tired! Not going to lie we looked aweful!! Ha! We flew to Ft. Lauderdale and stayed right on the beach in an awesome hotel! Then we took off on our cruise which was the best thing I have ever experienced!! I have never been on a cruise and I can't think of a better way to do a honeymoon! We didn't have to worry about anything! We ate so much food and had the best time ever! Our first stop was the Princess Cays in the Bahamas! I got my hair braided from some of the funniest ladies ever and we just relaxed on the beach! The next stop was St. Marteen where we went on a butterfly farm(yeah that was my choice). I was in awe cause I love butterflies. He showed us how to get one on our hands but I couldn't and I was getting so upset that I couldn't. I finally got one right before we had to leave. The next place was St. Thomas...I was so excited for this because I got certified to be a scuba diver and we were going to dive in St. Thomas. It was so awesome to be under water. How awesome is it that we can see life underwater! It was amazing! Last stop was Grand Turks where our excursion was canceled so we just relaxed again and swam in the ocean.
Our amazing ship!!! It was huge! With an ice cream and pizza bar!! Delicious!
